Waffles with maple syrup
Serves: 12
  • 250 g plain flour
  • 3 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 tablespoon caster sugar
  • 60g butter
  • 2 large eggs (700g size)
  • 1½ cups milk
  1. Sift dry ingredients into a large bowl.
  2. Melt butter.
  3. Separate eggs. Combine egg yolks and milk and mix together. Add egg yolk / milk mixture; and melted butter to dry ingredients. Beat until smooth.
  4. Beat eggs whites so they are firm but not too stiff. Fold in egg whites being careful not to over beat the mixture. The batter should be light and fluffy.
  5. Lightly grease and heat a waffle iron and place dollops of mixture in the centre of each square. The mixture will spread out when you close the lid. Cook for approximately 1 -2 minutes on each side or until crispy and brown.
  6. Serve with fresh fruit and maple syrup.
