Peanut butter, oat and nut raw energy bars
Serves: 24
  • 1½ cups rolled oats
  • ½ cup shredded coconut
  • ½ cup almonds, roughly chopped
  • ½ cup cranberries
  • 1 cup peanut cacao spread (or peanut butter)
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  1. Line a 22cm x 22cm tin with baking paper. If the tin is a bit smaller it doesn't matter, they'll just end up thicker.
  2. Place all the dry ingredients into a large bowl and mix thoroughly.
  3. In a separate bowl, mix together the peanut butter, maple syrup and vanilla extract.
  4. Add the peanut butter mixture to the dry ingredients and mix through making sure everything is coated in the peanut butter mixture.
  5. Tip the mixture into the baking tin and press down firmly until the top is smooth.
  6. Place in the fridge for 1-2 hours or until it feels solid.
  7. Cut into small squares. Store in the refrigerator so they stay nice and hard.
