Easy Chocolate Cake
Serves: 10-12 slices
  • 1¾ cups self-raising flour
  • ¾ cup caster sugar
  • ½ cup cocoa
  • 1 cup milk
  • 2 eggs
  • ½ teaspoon baking powder
  • ½ teaspoon vanilla extract
  • 125 grams butter, melted
  • 2 cups icing sugar
  • ¼ cup cocoa
  • 1 tablespoon butter, melted
  • 1 teaspoon vanilla extract
  • ¼ cup milk
  1. Preheat oven to 180 degrees celsius. Line a 22 cm springform tin with baking paper.
  2. Sift the flour, baking powder and cocoa into a large bowl. Add the caster sugar, milk, eggs, vanilla extract, and cooled melted butter. Mix together with electric beaters for 5 minutes.
  3. Pour into the prepared tin and bake for 45 minutes or until a skewer inserted into the centre comes out clean.
  4. Leave to cool in the tin for 10 minutes, then place on a wire rack to cool completely before icing.
  1. Sift the icing sugar and cocoa into a bowl. Add the melted butter, vanilla and milk and mix together, adding a little extra milk if necessary.
  2. Cover the top and sides of the cake with the icing.
