date and peanut butter balls
Serves: 20
  • 250 grams dates
  • 100 grams walnuts
  • ⅓ cup shredded coconut (and extra for rolling balls in)
  • 1 tablespoon chia seeds
  • 1 heaped tablespoon peanut butter
  • 1 teaspoon vailla extract
  1. Roughly chop the dates to make sure there are no seeds in them. Place in a small bowl and cover with water. Set aside.
  2. Place the walnuts, coconut, chia seeds, peanut butter and vanilla extract in the bowl of a food processor.
  3. Drain the water from the dates, then add the dates to the food processor.
  4. Blitz until everything comes together.
  5. Roll the mixture into small balls and place on a plate. Sprinkle with shredded coconut and roll the balls around to give them a good coating of coconut.
  6. Store in the fridge in an airtight container.
