Lunch dilemmas are commonplace because finding the perfect filling for a roll can be hard. Here’s a perfect combination that we regularly make – hot sopressa, avocado and cheese. Add a touch of mayonnaise or a little pesto (if you have some lingering in the fridge), pop it in a sandwich press for a couple of minutes and what you end up with is something you’ll come back to time and time again.
You could always add a layer of baby spinach or rocket, after it’s been toasted, if you want that extra green and a little but of crunch. But if salami isn’t your thing, you could always try roast beef. Enjoy!

You’ll need a sourdough roll.

Cut in half and add a little mayonnaise and a layer of hot sopressa.

Add a layer of avocado.

Add a layer of cheese – strong cheddar or provolone.

Pop it in a sandwich press for a couple of minutes or until the cheese melts.

- Cut the roll in half and spread a small amount of mayonnaise on the top half.
- Layer the sopressa, avocado and cheese.
- Place the roll in a heated sandwich press for a couple of minutes or until the cheese is melted, or eat without toasting.
