Lunch is always awkward. We tend to reach for the same thing over and over: avocado; tuna; ham, cheese and tomato; or salad. All great options but nothing to get excited about. They fill you up but you don’t leave you wanting more. Then we discovered this treat while on holiday, and were so blown away, we had to recreate it when we got home.
However, a dilemma arose when it came to the ingredients. This is lunch. It should be easy to throw together with little or no effort. I certainly wasn’t going to roast a piece of beef or a capsicum, or whip up a batch of pesto. That meant buying the best supermarket/ deli version of the things required. And then there’s the bread roll: if you want the best experience avoid the spongy white supermarket variety. A dense ciabatta / sourdough / turkish roll is what you need. This is an amazing sandwich that just has to be shared. Enjoy!
- ciabatta roll or similar
- mayonnaise
- pesto
- slices of rare roast beef
- roast capsicum, sliced
- red onion, finely sliced
- provolone cheese, sliced
- baby spinach leaves
Layer the ingredients on the roll and lightly toast in a sandwich press (or not..)
- Spread mayonnaise
- a layer of pesto
- a few slices of rare roast beef
- add capsicum
- red onion
- provolone
- and a layer of baby spinach leaves.
- Pop into a sandwich press and toast lightly.
